1. Lemon Cream Cheese Cookie


Ingredients

  • 1½ cups/190 grams all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 6 tablespoons/85 grams unsalted butter (¾ stick), at room temperature
  • 4 ounces/105 grams cream cheese, at room temperature
  • 1 cup/200 grams granulated sugar
  • 1 lemon, zested and juiced (about 4 teaspoons zest and 2 tablespoons
  • ¡uice)
  • 1 large egg
  • 3 tablespoons confectioners' sugar
  • 1½ tablespoons milk, plus more, as needed
Preparation
  1. Heat the oven to 350 degrees. In a medium bowl, whisk together the flour, baking soda and salt. In a large bowl with an electric mixer on medium, beat together the butter and half the cream cheese until combined, about 2 minutes. Beat in the granulated sugar and 4 teaspoons lemon zest until creamy, 1 to 2 minutes more. Beat in the egg until combined. Add flour mixture and beat until combined.
  2. Line two rimmed baking sheets with parchment paper. Portion the dough into 2-tablespoon scoops and arrange them on the sheets at least 1½ inches apart.
  3. Bake, rotating halfway through baking, until the cookies are puffed and set and just beginning to turn golden, 10 to 12 minutes. Transfer baking sheets to wire racks until cookies are completely cooled.
  4. Meanwhile, prepare the optional glaze: Whisk together the remaining cream cheese with the confectioners' sugar, milk and 1½ tablespoons lemon juice until smooth. Add additional lemon juice or milk until mixture forms the proper consistency for a glaze. Drizzle over cooled cookies. Let cookies stand at room temperature until the glaze has set. Store in an airtight container at room temperature for up to one week or in the freezer for a month.

2. Healthy Banana Bread


Ingredients

  • 75g of coconut oil (melted)
  • 2 bananas (mashed)
  • 150 grams of honey or maple syrup or agave syrup
  • 1/3 cup milk or water
  • 1 teaspoon of baking soda
  • 1 teaspoon of vanilla extract
  • pinch of salt
  • 1 teaspoon of cinnamon
  • 160 g oat flour (ground oat flakes)
  • 2 eggs
Preparation
  1. Mix the above ingredients in a bowl and, if desired, add e.g. chopped nuts or dark chocolate, raisins, pieces of fresh banana, etc. (Whatever comes to your mind, play around 🌸) Add a little more cinnamon on top.
  2. Pour the whipped mixture into a baking dish lined with baking paper and bake in an oven heated to 160 degrees for 60 minutes. When it's baked, insert a toothpick into the mixture, and if it doesn't leave a moist dough, it's ready! Leave to cool for 10 minutes, then you can serve! 😋

3. Raspberries Chocolate Bites


Ingredients

  • 2 handful frozen raspberries
  • 1 tablespoons agave syrup
  • 50gr dark chocolate
  • 1 tablespoons lemon juice
  • 1 tablespoons dried raspberries
Preparation
  1. Place frozen raspberries in a pan and mix with agave syrup. When the jam is formed, make 4 portions of bites and put them in the freezer for 20 minutes.
  2. When a solid mass has formed, pour melted chocolate and dried raspberries over it. Put it in the freezer for another 10 minutes and your dessert is ready.
